We are so blessed to live in Beautiful Grand Junction, Colorado where sweet corn can be found on several street corners during the summer months. Grilled Mexican Street Corn

Ingredients:
- 4 ears sweet corn
- Tajin Classic Seasoning
- 1/4 cup Mayonnaise with Lime
- 1/4 cup Sour Cream
- 1/2 cup Parmesan Cheese
- 2 Limes
- 1/4 cup chopped Cilantro




Directions:
- Shuck Corn and grill for 20 minutes. About 10 minutes per side or until sweet corn has a nice char.
- While corn is grilling. Mix together Mayo, Sour cream and half of parmesan.
- Pull sweet corn off the grill and coat all sides with Mayo mixture. Sprinkle each ear with remaining parmesan cheese, fresh squeezed lime juice, cilantro and a generous amount of Tajin Seasoning.
- Enjoy!
