Thanksgiving is one of the best times of year. I know that cooking for everyone can be very stressful but at the same time it is nice to spend time with our kids. We have hosted Thanksgiving dinner with our kids for YEARS! One of my go to recipes each year is this tasty Pumpkin Crunch Cake.

It’s that time of year again! Pumpkin everything! I get a giggle every year as I see some of the companies that are jumping on the pumpkin bandwagon. I mean lets face it, pumpkin is good, but it definitely doesn’t belong in everything!
But one thing that pumpkin definitely does belong in is this Pumpkin Crunch Cake. The pumpkin pairs beautifully with the yellow cake mix, and the pecans really put it over the top. I love the crunch! This is by far the best Pumpkin Crunch Cake recipe that I have ever tried.
Pumpkin Crunch Cake
- 4 eggs, slightly beaten
- 1 can 16oz or 20oz pumpkin
- 1 1/2 c. sugar
- 2 t. pumpkin pie spice
- 1 t. salt
- 1 can evaporated milk
- 1 pkg. yellow cake mix
- 1 c. butter, melted
- 1 c. pecans, chopped
- Mix first 6 ingredients in order listed.
- Pour into ungreased 9×13 pan.
- Sprinkle cake mix over filling.
- Pour melted butter over top of cake.
- Sprinkle with pecans.
- Bake @ 350° for 1 to 1 1/2 hours, serve warm or chilled.
I love how quick and easy this cake is to make. It is always a hit with friends and family. It is great warm with ice cream or chilled with whipped topping. Either way it will be a hit. You can even sprinkle a little extra pumpkin spice over the top to make it look all the more festive.
